What Is Glycation? How Sugar Affects Ageing, Longevity & Collagen Production

Your morning toast and your skin have something in common. Both can undergo the same chemical reaction. But that is not the weirdest part.

The reaction that gives toast its golden crust can also affect the collagen in your skin.

When sugars react with proteins, they can eventually form compounds called advanced glycation end products or AGEs. In food, sugar and proteins reacting under heat contribute to the browning, flavour and aroma we associate with toasted and cooked foods. Inside the body, glycation happens without heat and can gradually lead to AGE accumulation in tissues. [1]

And because your skin contains large amounts of collagen and elastin, it becomes particularly interesting when we start talking about skin ageing, collagen production and longevity. [2]

So, what exactly is happening to your collagen?

Think about a new elastic band. It stretches, moves and springs back into shape. Expose it to sunlight, heat and air over time, and it can become brittle, less flexible and more likely to snap.

Collagen is much more complex than an elastic band but the analogy helps explain what happens when AGEs accumulate.

Collagen gives skin much of its structure and mechanical strength. For skin to remain resilient, its collagen network needs to retain a degree of flexibility. As glycation progresses, AGEs can form cross-links between collagen molecules. These additional links can make the collagen network more rigid and less flexible. Research has associated AGE accumulation with changes in collagen structure, elasticity and the mechanical properties of skin. [2]

There is another reason researchers are interested in AGEs.

AGEs can bind to receptors known as RAGE. This can activate signalling pathways associated with oxidative stress and inflammation, adding another layer of biological stress to ageing skin. [3]

So when we talk about collagen and skin ageing, the story is not simply about making less collagen as we get older. The collagen already present in the skin can also change in how it behaves. That is what makes glycation relevant to the bigger conversation around skin longevity.

Does eating sugar automatically age your skin?

Not quite. Glycation is a normal chemical process that happens throughout the body and glucose itself is essential to life. Eating a cupcake one day does not mean you’re going to wake up with a new wrinkle or fine line.

It becomes more relevant when those cupcakes become part of your daily habit and that daily habit becomes years of repeated exposure because glycation and AGE accumulation are cumulative processes.

Blood glucose levels and metabolic health can influence the formation of AGEs inside the body. There is also another source that is easy to overlook: some AGEs are already present in food because they form during processing and cooking. [1]

So that beautifully browned crust on your toast is not something to panic about. It is simply a very visible example of chemistry that is much harder to see when it happens inside the body.


Why does glycation matter for skin longevity?

Your skin is constantly doing maintenance work. Cells are renewing. Collagen is being produced and remodelled. Damaged proteins are being processed. The skin barrier is being maintained. Inflammation is activated when needed and then needs to resolve. Cells are responding to UV exposure, pollution and other environmental stressors.

Ageing changes how efficiently many of these processes happen. Glycation is one piece of that larger picture.

Research has associated AGE accumulation in skin with changes in elasticity, wrinkles, hydration, dermal density, skin colour and other characteristics associated with ageing. A recent review also highlights the relationship between glycation, collagen and elastin cross-linking, oxidative stress, inflammation and impaired tissue repair. [4]

This is why skin longevity requires a broader view. It is not about finding one ingredient or one culprit responsible for every sign of ageing. It is about understanding the biological processes that influence how well skin functions over time. And glycation is one of those processes.

So why don't we hear more about it?

This is a question that stayed with Dr Vaibhav Mittal and Komal Mittal, founders of Skin Longevity Brand Karmic Beauty, throughout more than a decade in the beauty industry.

Can you do anything about glycation?

The more useful approach is to support the factors you can influence. A balanced diet, regular movement, adequate sleep and good metabolic health all matter. Protecting your skin from UV exposure matters too, since photoageing remains a major contributor to visible skin ageing.


Skincare can complement these habits by supporting the skin barrier, providing antioxidant protection and supporting collagen and overall skin resilience. Research into topical and dietary anti-glycation strategies is growing, although the evidence varies considerably between ingredients, and many promising findings still need stronger human clinical validation. That is worth remembering when reading skincare claims. “Anti-glycation” can sound impressive on a label. What matters is what the ingredient has actually been shown to do, at what concentration, in what type of study and whether those findings translate to human skin.

The same principle applies when looking for the best collagen for women, choosing a hydrolyzed collagen supplement or even picking a daily moisturiser for Indian skin. An ingredient list tells you what is inside a product. The evidence tells you what those ingredients can realistically do.

What does this mean for your skincare routine?

It means you do not need to build a complicated routine around glycation. Start with the fundamentals. Sun protection helps reduce cumulative UV damage. Antioxidant ingredients can help address oxidative stress, while collagen-supporting ingredients are being studied for their role in maintaining skin structure.

The goal is not to find a product that promises to “stop glycation”. It is to build habits and skincare that support your skin's ability to deal with multiple sources of stress over time.

Glycation changes how we think about ageing

The fascinating thing about glycation is how ordinary its ingredients are: sugar, protein and time.

There is no dramatic moment when you suddenly develop glycated collagen. It is a gradual process, unfolding alongside the many other changes that take place in ageing skin.
